MY DAY: Cabbage Roll Soup

I am not a fan of new recipes, but now, and then, I get on a kick.

This morning, someone on Facebook posted they were making cabbage roll soup.  I’ve tried cabbage rolls, and liked them, but I am a soup person.  I checked on ingredients, and then went off on my own journey of soup making.

I don’t measure, but this is what I used:

  • two heads of cabbage
  • 2lbs of ground chuck
  • white rice
  • chopped celery
  • chopped onion
  • chopped green pepper
  • chopped carrot
  • salt
  • pepper
  • Worcestershire sauce
  • diced tomatoes
  • 2-3 cans of Red Gold tomato juice (it’s manufactured in my home town, Elwood, Indiana)

My slow cooker is filled to the top, as are two large pans on the stove.  I will be giving some of it away, and freezing several containers.

I’ve tried two bowls, and it is delicious!
